These techniques will help you shift to shelf stable, flavour concentrated, dehydrated mushroom options available year round! When mushrooms are dried, flavour is concentrated. When you reconstitute with liquid containing more flavour than water, you increase flavour. The method in the video allows for cleaning of the mushrooms and straining the resulting liquid. Another method is to use the native moisture of the food you're cooking with to reconstitute mushrooms you know are really clean. For instance, you can sauté onions in butter, throw in the dry mushrooms and cover with a lid until the mushrooms get soft from the steam. Works great = Stronger flavour!
